The Viñátigo Pet Nat Listán Blanco 2021 and the Viñátigo Pet Nat rosé Listan Negro 2021, different sparkling wines to celebrate Christmas, go on the market.
The Pet Nat, pétillant naturell, or also called ancestral, is a sparkling wine from a single fermentation that is bottled before finishing it and therefore, the foam is generated with the sugar from the grape itself, which differentiates it from other best-known sparkling wines that are made with two fermentations adding sugar in the second to generate the bubble.
For the elaboration of these wines we use grapes of the Listán Blanco varieties for the white and Listán Negro for the rosé, cultivated in plots located at the highest levels of our region, in the Northwest of Tenerife, above 800 m, areas cold that these sparkling wines give us with good acidity, very fresh and aromatic.
We put this 2021 vintage on the market after a year of aging in the bottle with its own lees, a period of time in which it acquires silkiness on the palate and complexity on the nose.
As usual in Pet Nat, it comes out with some lees that generates some turbidity and covered with a sheet as a differentiating element.
