Coinciding with the launch of our Pet-Nat 2021 on the market, the magazine "Una Hora Menos" from Televisión Canaria has visited our winery to learn a little more about the peculiarities of this sparkling wine that is ideal for celebrating in a different way and original this Christmas.
Pet Nat, pétillant naturell, or also called ancestral, is a sparkling wine from a single fermentation that is bottled before finishing it and therefore generates the foam with the sugar of the grape itself, which differentiates it from the best-known sparkling wines that are made with two fermentations adding sugar in the second to generate the bubble.
For its production we use grapes of the Listán Blanco varieties for the white and Listán Negro for the rosé, grown in plots located at the highest levels of our region, in the Northwest of Tenerife, above 800 m, cold areas that give us these sparkling wines with good acidity, very fresh and aromatic.
This 2021 vintage was brought to the market after a year of aging in the bottle with its own lees, a period of time in which it acquired silkiness on the palate and complexity on the nose.
